rabarber cake














































English version of the rhubarb-cake recipe:

- preheat the oven at 160C degrees.
- wash en clean 400 gr. rhubarb, cut it in small pieces.
- mix 250 gr. of brown wheatmeal*, 1 teaspoon cinnamon, 1 teaspoon cardamom, 1 teaspoon wine-stone baking powder*, sniff of salt and the vanilla of one vanilla-pod.
- mix in another bowl 1 egg, 60 ml rice-milk, 4 tablespoons honey and 60 gr. melted coconut oil.
- add the dry ingredients and mix.
- add the rhubarb to the dough and mix carefully with a spatula .
- oil a cake tin and bake the cake ready in about 40 minutes.

"scrambled rabarber"




















































English version of scrambled rhubarb recipe (for 2 persons):

- wash en clean 250 gr. rhubarb, cut it in pieces and cook together with 60 ml water  for 10 minutes in a skillet until the water has evaporated.
- in the mean time cut 100 gr. goat cheese in small pieces and beat together with 4 eggs and a sniff of salt.
- add the egg-mix to the rhubarb, let fur for a while and spoon regularly.
- add when needed one tablespoon oil. The result looks like the english "scrambled eggs".
- split onto 2 plates and sprinkle 1 tablespoon honey on each portion.
- nice as lunch or as an appetizer.

rabarber-sinaasappel kruimeltaart


















































English version of the rhubarb-orange crumble-cake recipe:

- preheat the oven at 180C degrees.
- wash en clean 800 gr. rhubarb, cut it in pieces and cook together with 1dl fresh orange juice, the vanilla of one vanilla-pod and one cinnamon stick for 10 minutes.
- melt 80 gr. coconut oil and mix with 180 gr. of brown wheatmeal* and 50 gr. coconut sugar* until you got a crumble dough.- crumble 60 gr. sugar-free cornflakes* and add to the dough.
- add 30 gr. raisins and 10 gr. cranberries and mix with the dough.
- add the rhubarb-mix to a fireproof 8 dl dish and cover it with the dough.
- ready in about 15 minutes.

- nice with soya-vanilla pudding or vegan/sugar-free ice-cream*.

uitdaging en vraagje






























Een tijdje geleden ben ik gevraagd door "Mister Kitchen" of ik mee wilde doen met de de "Amsterdam Rhubarb Challenge 2014".  Dit houdt in dat ik een recept kan indienen waar rabarber de hoofdrol in speelt. De leukste en lekkerste recepten worden geselecteerd maar nu loop ik op de zaken vooruit, eerst maar eens een recept bedenken dat ik zou kunnen inzenden! En ook aan de lezers van dit blog: weten jullie een leuk recept dat ik zou kunnen uitproberen, natuurlijk aangepast aan de dingen die ik wel/niet kan eten? Er zijn drie categorieën: voorgerecht, hoofdgerecht en nagerecht. Nu heb ik alleen ervaring in het gebruik van rabarber bij nagerechten of andere zoetigheden. Eerder plaatste ik dit crumble recept hier. Volgende week plaats ik het recept van een andere taart met rabarber. Weet je een lekker recept? A while ago I have been asked by "Mister Kitchen" it I wanted to participate in the "Amsterdam Rhubarb Challenge 2014". This means that I can apply with a recipe where rhubarb is the main ingredient. The best recipes will be selected but that is something  to think about for the future, first I have to think about a recipe! And also for the readers for this blog: do you know a nice recipe that I could try, of course with the ingredients which I can or can not eat? There will be 3 categories: appetizer, main course and dessert. I only have experience in using rhubarb in a sweet dish. I placed this crumble recipe earlier. koekje van eigen deeg





























Eigenlijk gaat deze post over het aanmoedigen van uitproberen van recepten in de keuken. Soms gaat het mis en soms wordt het heerlijk! Alleen kan het vervelende van uitproberen zijn dat je daarna niet meer precies weet wat je nu eigenlijk gedaan hebt en dat is mij gebeurd bij het maken van deze lekkere koekjes. Ik had een restje kokos-creme gemengd met koksolie over van een ander testje (dit recept komt ook binnenkort online) waarmee ik niet wist wat ik moest doen en het bleek ook niet geschikt te zijn voor het recept waarvoor het bedoelt was. Dus toen dacht ik waarom niet proberen er koekjes van de maken met kokosrasp, cacao, een ei en wat meel. En ze bleken super lekker te zijn alleen weet ik nu niet de hoeveelheden van bijvoorbeeld de kokos-creme… Dit blijkt trouwens op een moment een grote favoriet van mij te zijn: de crème die je uit het blikje kunt scheppen van de kokosmelk als je het een dagje in de koelkast laat staan. Klik HIER voor een lekker toetje met kokos crème.  Dus toen dacht ik, ik plaats nog maar eens foto als bewijs dat ik ook de dingen maak en uitprobeer die ik hier plaats!

This post is about encouraging to try recipes in the kitchen, Sometimes it doesn't work out and sometimes it turned out to be delicious! The only thing about trying is that afterwards you can't remember what exactly it was that you did and that happened to me while making these cookies. I had a left-over of coconut-creme mixed with coconut-oil from testing another recipe (soon this recipe will be online) and I didn't know what to do with it. And it turned out that is was not suitable for the recipe I was testing. So I thought why not try to make cookies out of it with some coconut-grinds, cacao, an egg  and some wheat. And they turned out to be wonderful but I don't know the volume of the coconut-creme… This turns out to be a favorite product of me at the moment: you can use the creme you get when you put coconut-milk in the fridge for a day. brood
















































English version of the recipe (bread):


- preheat the oven at 180C degrees.
- mix 250 gr. bearded wheat* and 120 gr. rice-wheat*, 125 gr. oatmeal-flakes, sniff of salt and 1 teaspoon wine-stone baking powder*.
- add all sorts of seeds you like: maw-seed, sesame-seed, sunflower-seed, pumpkin-seed, pin nut-seed. From every kind 1 tablespoon.
- add 350 ml rice milk and knead to a soft, somewhat sticky dough.
- make a ball and cover with some more seeds on top.
- bake the bread ready in about 50 minutes and eat while it is still a bit warm.

popcorn



















































English version of the recipe (popcorn)

- heat up so much oil in a sauce pan that the bottom is covered
- add a handful of special popcorn-corn and put the cover on the pan
- when the corn is done put the popcorn in a bowl and add directly a big dash of agave-syrup* in the pan. Because of the heat it will melt immediately. Pour the syrup over the popcorn and mix with a spoon. Repeat if you want it sweeter.

I thought I would never be able to eat popcorn because of the sugar, so this is a nice discovery which I allow myself sometimes to eat. And it tasted exactly like I had it in memory!

havermout pannenkoeken












































English version of the recipe (oatmeal pancake's):

- mix 1 egg with 250 ml rice-milk.
- add 1 teaspoon wine-stone baking powder* and 140 gr. oat flakes.
- let well up for 15 minutes!
- bake the pancakes in oil over a slow fire. The dough is quite thick so this recipe is for about 6, thick pancakes!

- nice with bananas, jam, molasses, red fruit or cinnamon!

pimp je koelkast!













































Nieuw in mijn keuken: onze oude koelkast in een nieuw jasje. Ik heb de voorkant met schoolbord-verf beschilderd. Erg handig om boodschappenlijstjes op te maken. Alles wat op is (waar je tijdens het koken achter komt) kan erop geschreven worden zodat je het niet vergeet als je je daadwerkelijke lijstje zit te maken wat mij vaak gebeurd… Ook handig voor receptjes tijdens het koken of gewoon berichtjes aan je medebewoners. En vooral: het ziet er erg leuk uit ;-)

In with the new: our old fridge. I painted the front with blackboard-paint. Very handy to make shopping lists. Everything that is empty or you are missing during cooking you can write down so you won't forget it while you are writing your shopping list, what happens to me all the time. Also good to write a recipe down during cooking or just to write messages to your fellow householders. But mostly it just looks good ;-)

kikkererwten snack

















































chickpea snack

- preheat the oven at 180C Degrees.
- put 250 gr. of chickpeas* in a bowl and at 2 tablespoons of olive oil.
- add 1 teaspoon salt, 1 teaspoon paprika powder, 1 teaspoon cumin and some pepper and mix.
- spread the peas out on a baking try, covered with bakery paper.
- bake them for 20 minutes, scoop and bake for another 20 minutes. They have to become crispy and a bit darker. You can add more salt if they are ready if you like or use different kind of herbs.

*You can buy the dried chickpeas and let them soak over night and cook for 1,5 hour the next day. Or if you just want to try out this recipe you can buy the ones in a glass, ready to use. Whatever kind you use, let them leak out before you mix them with the herbs!

dit ben ik...





















… aan mijn tekentafel. Een tijdje terug ben ik door "Sis and So" gevraagd of ik iets wilde vertellen over wat ik doe. Ze bieden creatieve mensen die een webshop, bedrijfje of dingen maken de kans om daarover te vertellen en zetten dat op hun blog. Het doel is om elke dag tijdens 1 jaar iemand anders te plaatsen. Je kunt iets meer over mij lezen HIER waar ik ook over deze site vertel.

I while ago I was ask by "Sis and So" if I wanted to talk about what I do. They give creative (dutch) people who started a business, webshop or make things the opportunity to talk about that and they post it on their blog. They started this project and the goal is to post every day for one year a new post. You can read a bit more about me HERE  but unfortunately it is only in dutch.
