Just before the end of the year I thought I would place some picture's of de dishes I made for this blog and where I drew the recipes of. I noticed that I only took pictures from the desserts and cookies, probably because I'm not a very good photographer and I thought: this I can manage! What else would I draw for? ;-) It is also a little proof that I do make the recipes before I place them here. And because it is christmas where it is also a little bit about nice food, this collage fits in. I wish you all a very nice christmas and a good last week of 2014!

Winnaar!….

Maybe it was the sort give-away, but there were only two reactions to the blog-post below. But that makes the chances to win better for those who participated! I let my boyfriend choose the hand where the note of the winner was in. And hip hip hurray: quote number 26 is yours Marloes!
And some other nice news for my blog this week: it has been mentioned on two other websites. The articles are only in dutch, but if you want to take a look, click here and here.

hip hip hurray: give-away!

Vorige maand bestond mijn blogje twee jaar dus snel even iets feestelijks!

My blog is mentioned in the dutch Magazine "Libelle" this week. Even if it is a small statement and they made a mistake in the text (I do place recipes with gluten) I am still happy with it. I never thought that what once started as "dealing with" my own allergies and maybe give others some advice, would ever be mentioned in a magazine!

100% natuurlijk

Sorry, this post is only in dutch. It is about products you can buy in The Netherlands and the law about coloring and seasoning agents, food additives and e-numbers.

One last holiday picture and now it is not a big surprise where I went. This post is about the blueberry and this berry of course grows en masse in the woods of Sweden. During our walks we came across people who were picking this healthy berry. Original this berry grows in North-America where it was used for its strong pigment but soon its medicinal effects were discovered.
The blueberry is very healthy but it's hard to find it in stores. Nowadays you can buy  bilberries in every supermarket but this is a different kind which looks a lot like the blueberry. The blueberry has a lot of medicinal qualities and besides that it is good for digestion and the blood flow. The berries have a high dose of antioxidants. In the second world war british pilots used it agains night-blindness. The medicinal effects diminish quickly if you combine the berry with sugar. For example if you choose to eat a lot of blueberry jam it will have no use. It is best to eat the berries if you just bought them.

This was my view for the last two weeks while having my breakfast, very nice! Even if you go on a holiday is it possible just to eat the way you are used too. Just rent a place instead of a hotel and bring all your food-stuff with you. For some people this may not sound as a holiday, but if you have food allergies or follow a diet this may be the best solution. Instead of thinking "two weeks can't hurt" and afterwards getting health issues again.

klein hoeraatje!

A while ago I told you HERE about my participation at the "Amsterdam rhubarb challenge". I had to send in recipes with rhubarb. Finally I send in two recipes and my rhubarb strawberry sorbet ice-cream made it into the final! I'm very exited about that and also a bit proud. I never thought that one of my recipes could make it into the final because I cook with these allergy restrictions. This means that I have to take my recipe to Amsterdam and a panel will judge it. Unfortunately is this the point where it ends for me because I can't take the recipe myself to Amsterdam and all the friends who can live to far away and that point the ice-cream will be melted… I have to pull the recipe back from the final but it still feels like a little victory!
As a thank you for participating I got a bottle of Rabarcello from Mister Kitchen, I can't wait to taste it! For more information and where you can buy it, click HERE.

It is that time of the year again to start sowing you own herbs and vegetable-plants. Actually it is already a bit late, not for herbs, but tomatoes, cucumbers and peppers I always sow by the end of March inside in a little cabinet with glass. I love fresh herbs in my kitchen to coke with and the first cucumbers are also already visible!

A while ago I have been asked by "Mister Kitchen" it I wanted to participate in the "Amsterdam Rhubarb Challenge 2014". This means that I can apply with a recipe where rhubarb is the main ingredient. The best recipes will be selected but that is something  to think about for the future, first I have to think about a recipe! And also for the readers for this blog: do you know a nice recipe that I could try, of course with the ingredients which I can or can not eat? There will be 3 categories: appetizer, main course and dessert. I only have experience in using rhubarb in a sweet dish. I placed this crumble recipe earlier. Next week I will post a recipe of another cake with rhubarb. Do you know a recipe? Leave a message here or mail to info@celineschroeder.nl

This post is about encouraging to try recipes in the kitchen, Sometimes it doesn't work out and sometimes it turned out to be delicious! The only thing about trying is that afterwards you can't remember what exactly it was that you did and that happened to me while making these cookies. I had a left-over of coconut-creme mixed with coconut-oil from testing another recipe (soon this recipe will be online) and I didn't know what to do with it. And it turned out that is was not suitable for the recipe I was testing. So I thought why not try to make cookies out of it with some coconut-grinds, cacao, an egg  and some wheat. And they turned out to be wonderful but I don't know the volume of the coconut-creme… This turns out to be a favorite product of me at the moment: you can use the creme you get when you put coconut-milk in the fridge for a day. Click HERE for a delicious dessert with coconut-creme. So I thought a put a photo online again to proof that I really do make the recipes

popcorn

English version of the recipe (popcorn)

- heat up so much oil in a sauce pan that the bottom is covered
- add a handful of special popcorn-corn and put the cover on the pan
- when the corn is done put the popcorn in a bowl and add directly a big dash of agave-syrup* in the pan. Because of the heat it will melt immediately. Pour the syrup over the popcorn and mix with a spoon. Repeat if you want it sweeter.

*available at organic food shop.

I thought I would never be able to eat popcorn because of the sugar, so this is a nice discovery which I allow myself sometimes to eat. And it tasted exactly like I had it in memory!
